Indonesia is an enormous collection of islands and spans over 300 different ethnic groups. It is no surprise then that the cuisine is extremely varied and diverse. Fish is important, with poultry a close second. Beef, buffalo, goat, and mutton also commonly used proteins. Cloves and nutmeg are harvested locally, but a number of other spices were introduced as the result of international trade. Tropical fruits abound and rice is eaten in nearly every meal (and used in both sweet or savoury dishes) but most often eaten as plain rice with vegetables or protein.
